Do not sink in the mud-cake of despair , but serve it with cream and strawberries




Hi everyone, I got requests to keep writing, so here I am again.


And what sort of week have I had? Definately a chocolate mud cake week, thats for sure. Mud such as quick sand made me sink deeply into self-pity and distrust. Yes that's right guys, when you "gnaw on the bone of worry" instead of "chewing on the cud of scripture", disaster surely happens. Distrust is a sinaster thing and it can create havoc in your relationships with everyone around you. When I recognised this, I chose to throw it in the bin . So the mudcake was served at dinner tonight with strawberries and cream .

Here is the recipe , remember to serve it with strawberries and the cream . Otherwise you will just be miserable.

Chocolate Mud cake

300g dark chocolate, chopped

250g unsalted butter

6 eggs, separated

175g caster sugar

1 tsp vanilla essence

1/2 c hazelnut meal

1/2 c SR flour

strawberries and cream to serve


Preheat oven to 160 degrees C.

Grease and line a round 22cm springform pan.

Melt butter and chocolate in microwave.

whisk together egg yolks, sugar and vanilla until thick and pale.

Fold thru choc-butter mixture until well-combined

In a separate bowl beat egg whites with electric mixer until soft peaks form

With a metal spoon, fold hazelnut meal and flour thru chocolate mixture.

Fold one-third of egg whites thru chocolate mixture, then gently fold thru remaining mixture.

Pour into prepared pan and bake for 45 minutes until firm but still fudge-like. Cool in pan. Serve with strawberries and cream.
